i saw a post with pancakes over bacon and thought it might work better with waffles for our family.
yum!
bacon in germany is thin . . .like i can see you through it thin. take what you can get i guess. i f5ried the bacon a little to make sure it was done. then i poured the waffle mix on and places a couple of strips of bacon on top. easy. and my waffle iron tends to stick on top so i put the bacon on toip. one time i put the bacon on first and ended up with my waffle on the lid when i lifted it. aside from being amusing, not the desired result. they all turned out great.i think you could fry, chop and put the bacon in the batter, but really, why go to all that work. let's face it . . the longer the bacon remains free, the more chance it has of being eaten prematurely.
in case you need a waffle or pancake recipe - i stole this from another site but can't find it right now
if you don't have buttermilk on hand, (like me) - pour 1 1/4 cup milk in a separate cup and add 1 TB vinegar or lemon juice. let that sit while you mix up the rest. this is your buttermilk.
1 1/4 cup flour
1 tsp baking powder
1 tsp baking soda
pinch salt
1/4 cup sugar
your buttermilk should be showing signs of separation now so add
an egg and beat them together.
add 2 TB melted butter
mix it all together and pour it over apples for apple pancakes or bacon or bananas, whatever
